Use as a dry rub. Rub the spice mix on the meat about 20 mins before   cooking. This rub has the lemony tang of sumac, the spicy, peppery, slightly sweet but pungent taste of ginger, and its perfect partner cinnamon, the warming taste of paprika, garlic, salt and pepper, and the delightful fresh taste of basil and oregano.
