The vegetables are cooked in a sauce consisting of onions, garlic, ginger, chilli and tomato and finished off with yoghurt and aromatic spices (cloves, cardomon, cinammon, peppercorns and cumin).
Rogan Josh curry originally came to Kashmir from Iran, or Persia as it was then known. Its always part of the time-honoured Kashmiri multi-course meal. Rogan means clarified butter in Persian, while Josh means hot or passionate. Rogan Josh thus means meat cooked in clarified butter at intense heat.
All dinner packs contain the correct amount of spices for a meal for four people and contain a shopping list and full recipe. The chilli comes in a seperate pack heat as desired.
