This curry can be vegetarian or made with meat. When made of beef or lamb it is called Gosht (or Ghoust) Madras. Authentic Madras curry is not supposed to be creamy like tikka masala or butter chicken. The gravy is stew-style hearty cooked onion, garlic and tomato gravy. It has the earthy taste of roasted coriander and cumin seeds, and the zing of ginger and lemon.
Madras curry is said to originate from the south of India, and gets its name from the city known as Madras when English merchants arrived there in 1640 (now Chennai).
All dinner packs contain the correct amount of spices for a meal for four people and contain a shopping list and full recipe. The chilli comes in a seperate pack for heat as desired.
