This Bengali spice mix literally means “five spices”. It can be bought whole or ground. It is good with lentils, vegetables (especially spinach and potato) or chutneys. Try sautering some of the whole seeds in oil, then add partially cooked diced potato, and cook, stirring, until browned.
Phanch phoran is also delicious as a rub for meats, added to Indian curries, sprinkled on vegetables or used for pickling vegetables. Also good with fish in the ground form.
