Lapsang souchong is a tea from the Fukien province in China. Traditionally, the leaves are dried over pinewood fires. Mixed with smoked paprika for a more mellow warming heat, then cayenne for a bit of a kick, brown sugar to help seal the meat, and a touch of garlic, this is an unusual BBQ mix to impress friends and family.
