This is a medium to spicy curry from the town Kolhapur (named after a demon), in the Maharashta province of western India. The region is known for its lamb and goat curries. The meat is marinated in salt, turmeric, ginger and garlic. Then cooked with onion, tomato, and coconut, cloves, pepper, poppy seeds, coriander, fennel and chilli.
The food of Kolhapur is associated with the Mahratta Empire who's forces were the finest of India's warriors, routing the moguls and causing untold mischief for the British.
